Individual Gorgonzola Beef Wellingtons

June 11th of this year was a really hard day for my family. It would have been my parent’s 45th wedding anniversary. If mom had been able to make it to June, we were going to throw a big party for them, as if it had been they’re 50th, because we knew mom wasn’t going to live to see their 50th. Unfortunately, mom didn’t make it to their 45th. She passed away 4 months shy of it. So, in honor of the anniversary, and the party we would have had, Dad, Carrie and I went out to a really really nice dinner.

We each ordered fabulous appetizers:

And an amazing entree:

Filet Mignon and Softshell Crab Cake Oscar, served over Mascarpone Mashed Potatoes

Carrie and Dad had wine and I had a mixed drink.

We talked about the past.

We talked about the future.

We talked about mom.

We cried.

Sirloin Tips and Mushrooms

This is another recipe that I found at All Recipes, and the edits I made to it are from one of the comments. The steak in this is so yummy and tender, and the sauce is great! You can serve it over pasta, but I prefer to serve it over mashed potatoes. There’s just something about steak and potatoes being together :P

My only complaint about this dish is that it may not be “kid-friendly” if say… you have a kiddo that doesn’t like “sauce” on anything. Ketchup is just fine, but no… no sauce please and thank-you! However, if you are serving this for a group of friends (who hopefully don’t mind sauce!) they will be astounded at your culinary prowess, I promise!

Mom’s Hamburger Pie

After I finish with this blog I will be caught up! My goal is to do a blog a day, but my first blog was Sunday evening, and that was just an introduction. I didn’t want to have two posts back to back, so I waited until Monday to blog about Sunday’s dinner. Then I waited until today to blog about Monday’s disaster, I mean dinner. :P So now all I have to do is blog about tonight’s dinner and I will be caught up! Go me!

Today was a much better day than yesterday. I woke up at 9:30 when TJ was leaving to head up to his Grandpa’s to help him out. They’re working on a nearby church to fix it up. Apparently today was demolition day, as he came back home covered in dust after tearing down walls.

While he was gone I had my Mary Kay consultant come over to discuss me possibly becoming one. I like the idea of being able to host parties for it to earn some money, but I just don’t see that happening right now. At least not with a lot of people. Maybe some people here and there though (I hope hehe). I think I will primarily end up selling it to myself, my sister in AZ, and my brother’s fiance. I did decide to become a consultant today though, so if anyone is interested at all in Mary Kay, whether you have questions or would like to purchase something, please drop me a comment somewhere on my blog! :)

Other than that I spent the day pretty lazily. I got my 3rd entry up and thawed some hamburger for dinner. One of those lazy days where I had chores but didn’t get to them like I should have. But that’s what tomorrow is for right?

Tonight’s dinner was Hamburger Pie. It was something my older siblings grew up with, and was still around when I was growing up. Oh, I bet that sounds pretty strange huh? Usually siblings grow up together… so I guess I’ll explain. My siblings and I are different. Not different as in we aren’t completely related or anything like that, we’re different because there is a major age difference between us. Mom was about my age now when she had my oldest sister. A few years after my sister was born, my brother came along. Then about 5 years or so later my sister in AZ came along. They all grew up, and when the sister in AZ was 15, I was born. I think my mom was 43 or 44 when she had me. So my older siblings all grew up together, and then there was me lol I liked to say I had the best of both worlds; siblings when I wanted them, but usually I was an only child XD It’s kind of funny to think that my mom and oldest sister were closer in age than my oldest sister and myself. But once again, I digressed from the main point I was getting at, which was dinner!

Simply Lasagna

On one of my random searches through All Recipes I found this lasagna recipe. It looked simple enough, so I decided to try it. This was the first lasagna that I made myself. I’m used to just buying a frozen one and tossing it in the oven, this one took a tad more work than that though :P But it’s still pretty straight forward and is really tasty!!

Family Dinner

Looks like I managed to make it through my first blog entry! Hooray! Now it’s time to get to it :)

After mom passed and my dad was out in AZ visiting my other sister and her family, it was just TJ and I at home. I had plans for a Sunday dinner involving a 5 lb rump roast with potatoes, carrots, onion, and celery in the crock pot, but what’s the point in making such a big meal for two people? So after the dinner was done I hauled it over to my oldest sister’s house and we enjoyed it with her family. After that meal we have been having dinner together (now including my dad since he’s home from AZ) every Sunday.

It’s really nice to be able to spend time with family on those days. I look forward to it every week. It’s a shame that we hadn’t started it after we moved closer to my sister, that way mom could’ve enjoyed it as much as I am.

For last night’s dinner I made my first ever homemade lasagna along with the red velvet cupcakes with cream cheese frosting that I had first made for mom’s 65th birthday that she spent in the hospital. I was a little daunted by the lasagne because I had never made it before, but it turned out really yummy!!

We had a wonderful dinner, and I know there are lots more to come :)
