Mixed Berry Tart

Last Sunday was our first family dinner that we had had in a while. Sad, I know. Everyone’s just been so extremely busy lately, and my dad has hardly been home on weekends because he’s been going out with friends and eating out (less cleanup for me! LOL). But finally I put my foot down and insisted that he stay home on Sunday night since I was going to be trying out 2 new recipes on him and Carrie, Jeff, and the boys.

The first was this yummy crockpot recipe which turned out super yummy!

The second was a Mixed Berry Tart that I had found at the Williams-Sonoma website.

This tart was amazing. I swear it.

The crust was like shortbread. Carrie actually suggested that I could make the crust dough and just put it in pan, bake it, and slice it up to eat on its own.

Bacon-Swiss BBQ Chicken (Crockpot)

It’s time for another super delicious and easy recipe for summer! I have been looking at this recipe since I first got my “Super-Fast Slow Cooking” cookbook by Gooseberry Patch back in November. Whenever I go to Carl’s Jr, I always get their Charbroiled Chicken Club, which has my two favorite things ever. Bacon, and Swiss cheese. So what if it’s all going to my butt, it tastes AMAZING and I just can’t help myself. So I invited Carrie, Jeff, and my two nephews over for another Sunday dinner so I had an excuse to try this recipe out.

Now, if anyone is wondering how easy this recipe is, it’s the simplest thing I’ve ever made.

Ever.

Seriously.

You put 6 boneless, skinless chicken breasts in a crockpot, top with a bottle of bbq sauce, and cook on low for 8-9 hours.

At some point while it’s cooking, you fry up 6 slices of bacon and make them extra crispy (or more if you are hungry and decide that bacon is the perfect thing to snack on since you’re being taunted by the aroma of bbq chicken coming from your crockpot).

Then 15 minutes before the chicken is done, top each breast with 1 slice of bacon, split in half, and 1 slice of swiss cheese. Turn the crockpot to high and cook for 15 more minutes, or until the cheese is melted.

Voila!

Easy and delicious.

Serve with a garden salad and dinner rolls. Make sure to save some of the bbq sauce from the crockpot to serve over the chicken!

Farmers Market Trip

Today I decided that I wanted to go to our local Farmers Market. I hadn’t been to one in a few years; the last one I went to was within walking distance of my old house, but we would usually stop there on Sunday’s after mass on our way back home. Unfortunately, I wasn’t interested in anything about it, other than getting out of there so I could get back home as soon as possible because I was b-o-r-e-d.

Gosh I led such an exciting life a few years ago…

TJ and I got to the market at about noon, which really isn’t the best time to go. It was already really hot (almost 90 degrees F), so walking around was not so much fun because I was starting to sweat like a pig (yuck!). It was totally worth it though. Check out what they had!

Cho’gall is DEAD!

23 Jul Guild with dead Cho'gall

I am so proud of my guildies in World of Warcraft! Today we accomplished something that we have been working toward since the latest expansion (Cataclysm) was released last November. Well, maybe not since last November… but since March of this year. I was slightly distracted with mom being very very sick for me to do anything more than hit 85 on my main character. :(

But now… after putting together raids on Saturday mornings and working on Bastion of Twilight, losing one of our main healers, then our main tank, and having many missed raids due to lack of signups, this afternoon, we killed him. Cho’gall is DEAD!

To be perfectly honest, I didn’t think this day would come. I was getting to my whit’s end trying so hard to make this work, but we did it. And it was a success!
